The Parts of a Cake
Whatever is on top of the cake is the
Topper.
The proper term for what you probably call a layer is a Tier.
Layers are inside
a tier. In our wedding cakes, there are four layers of cake and three layers of filling in each Tier.
At
the base of each tier is a Border. The Border, which can be icing dots or an edible ribbon, hides construction
seams.
Small clusters of flowers for the side of the cake are called Pokes. You don't need them,
but they do look nice.

This style is called "Floating".
Each tier is placed on a separate stand.
This style is a "Centerpiece Cake", sometimes
called a Table Cake. The cakes are used instead of another type of centerpiece. It can be much less expensive
overall than a floral centerpiece. You're going to buy cake anyway . . .

Types of Cakes
A wedding cake is special. And it should be, don't you think?
When a tier is sliced by
your caterer into servings, you'll see layers of cake and filling. Filling is whatever is between the layers of
cake. It might be buttercreme or a flavored filling of some kind. Our cakes have four layers of cake and three
layers of filling (plus the icing on top) in each tier. They make a lovely plate presentation.
Sheet cakes
are one layer (no filling) of cake with icing on top. You've probably seen them at birthday parties or showers.
If you see a piece of sheet cake and a piece layer cake side by side there is an obvious difference. Louisville Wedding
Cake by Gallery House does not offer sheet cakes.
Kitchen cakes are layer cakes that are iced, but have no decoration.
They aren't put on display, but kept in the kitchen. Your caterer can pre-slice these and get them ready to be served,
as the display cake is being cut. You can save a bit of money with kitchen cakes because you save the difference in
the upcharge for special decorations. A 150 serving minimum purchase for a display cake is required.
Cupcakes
are another option. Frankly, if your venue levies a cake cutting charge, think seriously about ordering cupcakes to
avoid that fee. You will not save money by ordering cupcakes, however. Although there is no construction, there
is more baking time, much, much more decorating time, a more difficult transportation and much longer setup time.
